Why is it important to have your vehicle appraised? - It's quite simple. Insurance companies always base their calculations on a rough replacement value. Since we love our cars more than our neighbors (let's just assume the average neighbor here), we tend to take better care of them and treat them more carefully. Therefore, they're in better condition. If you can prove this condition in the event of a claim, you're naturally entitled to more compensation.
Another point is that many heavily modified vehicles are significantly underinsured. For example, you might have a BMW M3 with €50,000 worth of modifications and have it insured normally without disclosing these modifications. If your vehicle is stolen or you're involved in an accident, your insurance company will pay the damages as if it were a stock vehicle. Your carbon fiber fender from Alpha-N will then only be worth as much as a standard BMW metal fender. You'll have to pay the difference for the rebuild.
